Ingredients

  • 2 cups All-purpose flour
  • 1 teaspoon Baking soda
  • 0.5 teaspoons Salt
  • 0.75 cups Unsalted butter (softened)
  • 0.5 cups Granulated sugar
  • 0.75 cups Brown sugar (packed)
  • 2 teaspoons Vanilla extract
  • 2 large Eggs
  • 1.5 cups Semi-sweet chocolate chips
  • 3 pints Ice cream (any flavor)

Directions

Step 1

Preheat your oven to 375°F (190°C) and line two baking sheets with parchment paper.

Step 2

In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.

Step 3

In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy, about 2-3 minutes using a hand mixer or stand mixer.

Step 4

Add the vanilla extract and eggs to the butter mixture, mixing until fully incorporated.

Step 5

Gradually add the dry ingredients to the wet ingredients in small batches, mixing on low speed until just combined. Avoid overmixing.

Step 6

Fold the chocolate chips into the dough using a spatula.

Step 7

Scoop the dough into tablespoon-sized balls and place them about 2 inches apart on the prepared baking sheets.

Step 8

Bake in the preheated oven for 8-10 minutes, or until the edges are golden but the centers are slightly soft. Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.

Step 9

Once the cookies are completely cool, pair them by size to create matching sandwich sets.

Step 10

Let the ice cream soften slightly at room temperature for 5-10 minutes. Scoop about 1/3 cup of ice cream onto the flat side of one cookie, then press the flat side of a second cookie onto the ice cream to form a sandwich.

Step 11

Repeat with the remaining cookies and ice cream. Wrap each sandwich individually in plastic wrap or parchment paper.

Step 12

Place the assembled ice cream sandwiches in the freezer for at least 1 hour to firm up before serving.
