Ingredients

  • 32 oz frozen french fries
  • 1 lb ground beef
  • 1 yellow onion, diced
  • 2 garlic cloves, minced
  • 2 tbsp tomato paste
  • 14.5 oz canned diced tomatoes
  • 15 oz kidney beans, drained and rinsed
  • 2 tbsp chili powder
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 0.5 tsp cayenne pepper
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 cups shredded cheddar cheese
  • 2 green onions, sliced
  • 0.5 cup sour cream (optional)

Directions

Step 1

Preheat your oven according to the package instructions on the frozen french fries. Spread the fries in a single layer on a baking sheet and bake until golden and crispy.

Step 2

While the fries are baking, heat a large skillet over medium-high heat. Add the ground beef and cook until browned, breaking it apart with a wooden spoon. Drain any excess grease.

Step 3

Add the diced onion and minced garlic to the skillet with the ground beef. Cook until the onion is translucent, about 3-4 minutes.

Step 4

Stir in the tomato paste, mixing it well with the beef and onion mixture. Cook for 1-2 minutes to deepen the flavor.

Step 5

Add the canned diced tomatoes (with their juices), kidney beans, chili powder, cumin, paprika, cayenne pepper, salt, and black pepper. Stir to combine.

Step 6

Reduce the heat to low and let the chili simmer for 15-20 minutes, stirring occasionally, to thicken and meld the flavors.

Step 7

Once the fries are done baking, remove them from the oven and transfer them to a large serving platter or individual plates.

Step 8

Spoon the hot chili generously over the crispy fries.

Step 9

Sprinkle the shredded cheddar cheese over the top of the chili. Allow the heat from the chili to melt the cheese, or place the assembled fries under the broiler for 1-2 minutes for extra melty cheese.

Step 10

Garnish with sliced green onions and a dollop of sour cream if desired.

Step 11

Serve immediately and enjoy your Linda's Hot Chili Cheese Fries!
