Ingredients

  • 4 medium Russet potatoes
  • 3 tablespoons Olive oil
  • 2 tablespoons Butter
  • 1 teaspoon (chopped) Fresh rosemary
  • 1 teaspoon (chopped) Fresh thyme
  • 1 tablespoon (chopped) Fresh parsley
  • 3 cloves (minced) Garlic
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 0.5 teaspoons Smoked paprika

Directions

Step 1

Wash and peel the potatoes, then dice them into evenly sized 1/2-inch cubes to ensure even cooking.

Step 2

Place the diced potatoes into a large pot filled with cold, salted water. Bring the pot to a boil and cook the potatoes for 5 minutes or until slightly softened but not fully cooked. Drain the potatoes and set them aside to cool slightly.

Step 3

Heat a large skillet or cast-iron pan over medium heat. Add the olive oil and butter, allowing the butter to melt completely.

Step 4

Add the partially cooked potatoes to the skillet in a single layer. Let them cook undisturbed for 5 minutes to create a golden, crispy exterior on one side.

Step 5

Sprinkle the potatoes with chopped rosemary, thyme, smoked paprika, and minced garlic. Toss the potatoes gently to coat them evenly with the herbs.

Step 6

Continue cooking the potatoes, turning them occasionally, for another 10-12 minutes until they are crispy on all sides.

Step 7

Season the potatoes with salt and black pepper to taste, and sprinkle the fresh parsley over the top just before removing them from the heat.

Step 8

Transfer the herbed home fries to a serving dish and serve warm as a delicious side for breakfast, lunch, or dinner!
