Ingredients

  • 12 pieces large eggs
  • 4 tablespoons basil pesto
  • 2 tablespoons mayonnaise
  • 2 tablespoons grated Parmesan cheese
  • 1 teaspoon lemon juice
  • 6 slices thinly sliced deli ham
  • 1 teaspoon olive oil
  • 0.5 teaspoons salt
  • 0.25 teaspoons ground black pepper
  • 12 pieces fresh basil leaves (optional for garnish)

Directions

Step 1

Place the eggs in a large saucepan and cover them with water. Bring to a boil over medium-high heat, then reduce the heat to low and simmer for 10 minutes.

Step 2

Drain the eggs and transfer them to a bowl of ice water. Let them cool for 5 minutes to make peeling easier.

Step 3

Peel the eggs and slice them in half lengthwise. Gently scoop out the yolks and place them in a medium bowl. Set the egg whites on a serving tray.

Step 4

To the bowl with the yolks, add basil pesto, mayonnaise, grated Parmesan, lemon juice, salt, and black pepper. Mash the mixture with a fork until smooth and creamy.
