Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 12 ounces penne or spaghetti pasta
  • 3 tablespoons olive oil
  • 3 cloves garlic cloves, minced
  • 2 cups cherry tomatoes, halved
  • 0.5 cup kalamata olives, sliced
  • 0.75 cup feta cheese, crumbled
  • 2 teaspoons fresh oregano, chopped
  • 0.5 teaspoons red pepper flakes
  • 2 tablespoons lemon juice
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 2 tablespoons fresh parsley, chopped (for garnish)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente. Drain and set aside, reserving 1/2 cup of the pasta cooking water.

Step 2

While the pasta cooks, heat 2 tablespoons of olive oil in a large skillet over medium-high heat.

Step 3

Season the shrimp with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper. Add the shrimp to the skillet and cook for 2-3 minutes per side, or until pink and cooked through. Remove the shrimp from the skillet and set aside.

In the same skillet, add the remaining tablespoon of olive oil. Sauté the minced garlic for 30 seconds, or until fragrant.
