Ingredients

  • 1 cup Fresh strawberries
  • 1 cup (diced) Fresh mango
  • 0.5 cup Fresh blueberries
  • 1 cup Greek yogurt (plain or vanilla)
  • 2 tablespoons Honey (or maple syrup)
  • 0.5 cup Orange juice

Directions

Step 1

Wash and prepare the fruit: hull the strawberries, peel and dice the mango, and rinse the blueberries.

Step 2

In a blender, combine the strawberries, 1/4 cup of Greek yogurt, 1 tablespoon of honey, and 1/4 cup of orange juice. Blend until smooth. Set this mixture aside in a bowl or pouring cup.

Step 3

Rinse out the blender, then repeat the process: combine the mango, 1/4 cup of Greek yogurt, 1 tablespoon of honey, and the remaining 1/4 cup of orange juice. Blend until smooth. Set this mixture aside.

Step 4

Layer the popsicle molds: Start by spooning some of the strawberry mixture into the molds, followed by a layer of the mango mixture, and finally a few fresh blueberries. Repeat the layers until the molds are filled, leaving a little space at the top for expansion as it freezes.

Step 5

Insert popsicle sticks into the center of each mold. If the sticks don’t stand up on their own, use a foil covering over the mold to hold them in place.

Step 6

Place the molds in the freezer and allow the popsicles to freeze for at least 6 hours or overnight until fully solid.

Step 7

To remove the popsicles, run the molds under warm water for a few seconds to loosen, then gently pull them out.

Step 8

Serve immediately or store in airtight plastic bags in the freezer for up to 2 weeks.
