Ingredients

  • 2 pounds Russet potatoes
  • 6 tablespoons Unsalted butter
  • 0.5 cups Heavy cream
  • 0.25 cups Whole milk
  • 1 teaspoon Salt
  • 0.5 teaspoons Freshly ground black pepper
  • 2 cloves Garlic cloves (optional)
  • 1 tablespoon Chopped fresh parsley (optional, for garnish)

Directions

Step 1

Peel the potatoes and cut them into evenly sized 1-inch chunks for uniform cooking.

Step 2

Place the potato chunks (and optional garlic cloves if using) in a large pot. Cover them with cold water, ensuring the water is about 1 inch above the potatoes.

Step 3

Add 1 teaspoon of salt to the pot. Bring the water to a boil over medium-high heat.

Step 4

Reduce the heat to a simmer and cook for 15–20 minutes or until the potatoes are fork-tender.

Step 5

While the potatoes are cooking, heat the heavy cream, whole milk, and butter in a small saucepan over low heat until the butter is just melted. Stir occasionally to combine and keep warm.

Step 6

Drain the potatoes in a colander and let them sit for 1–2 minutes to allow excess moisture to evaporate.

Step 7

For extra fluffy potatoes, pass the drained potatoes through a potato ricer or a fine mesh sieve into the pot. If you don’t have a ricer, use a potato masher for a slightly chunkier texture.

Step 8

Slowly pour the warm cream and butter mixture into the mashed potatoes while stirring with a spatula or wooden spoon. Continue mixing until smooth and creamy. Add more milk if necessary to adjust the consistency.

Step 9

Season the mashed potatoes with salt and freshly ground black pepper to taste.

Step 10

Transfer the mashed potatoes to a serving dish and, if desired, garnish with a sprinkle of chopped fresh parsley.

Step 11

Serve immediately and enjoy Linda's fluffy mashed potatoes!
