Ingredients

  • 12 oz fettuccine pasta

  • 2 cups fresh baby spinach
  • 1.5 cups heavy cream
  • 4 oz cream cheese, softened
  • 1 cup Parmesan cheese, grated
  • 1 tsp Italian seasoning
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp fresh parsley, chopped (optional for garnish)

Directions

Step 1

Bring a large pot of salted water to a boil and cook the fettuccine pasta according to the package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set the pasta aside.

In a large skillet, heat the olive oil and butter over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.

Add the diced zucchini and red bell pepper to the skillet. Sauté for 3-4 minutes until tender but still slightly crisp.
