  • 2 large Eggs
  • 1 cup Buttermilk
  • 0.25 cup Olive oil
  • 0.5 cup Pesto sauce
  • 0.5 cup Grated Parmesan cheese
  • 0.5 cup Shredded mozzarella cheese
  • 2 tablespoons Chopped fresh basil (optional, for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners or lightly grease it with cooking spray.

Step 2

In a large mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt until well combined.

In a separate medium bowl, whisk the eggs until slightly frothy, then add in the buttermilk, olive oil, and pesto sauce. Mix well until smooth.
