Ingredients

  • 4 large Russet potatoes
  • 2 tablespoons Olive oil
  • 2 teaspoons Kosher salt
  • 1 teaspoon Black pepper
  • 4 tablespoons Unsalted butter
  • 1 cup Sour cream
  • 1 cup Shredded cheddar cheese
  • 2 tablespoons Chopped green onions
  • 1 quarter cup Cooked and crumbled bacon

Directions

Step 1

Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.

Step 2

Wash and scrub the potatoes thoroughly under cold water. Pat them dry with a clean towel.

Step 3

Using a fork, poke several holes all around each potato to allow steam to escape during baking.

Step 4

Place the potatoes on the prepared baking sheet. Rub each potato with olive oil, ensuring they are evenly coated. Sprinkle each potato with kosher salt and black pepper.

Step 5

Bake the potatoes in the preheated oven for 60 to 70 minutes, or until the skins are crispy and a fork easily pierces through the flesh.

Step 6

Once the potatoes are done, carefully remove them from the oven and let them cool for 5 minutes.

Step 7

Use a sharp knife to cut a slit lengthwise down the center of each potato. Gently squeeze the ends toward the center to open up the potato.

Step 8

Fluff the inside of each potato with a fork, then add 1 tablespoon of butter to each potato, letting it melt into the fluffy interior.

Step 9

Top each potato with a dollop of sour cream, a generous sprinkle of cheddar cheese, chopped green onions, and crumbled bacon.

Step 10

Serve immediately and enjoy the fantabulous flavors of Linda’s baked potatoes!
