Ingredients

  • 2 cups all-purpose flour
  • 0.75 cups granulated sugar
  • 2 teaspoons baking powder
  • 0.5 teaspoons baking soda
  • 1.5 teaspoons ground cinnamon
  • 0.25 teaspoons ground nutmeg
  • 0.5 teaspoons salt
  • 1 cups unsweetened applesauce
  • 0.5 cups vegetable oil
  • 2 large eggs
  • 1 teaspoons vanilla extract
  • 0.25 cups milk
  • 0.5 cups optional chopped walnuts or pecans

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners or lightly grease the cups.

Step 2

In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt until well combined.

Step 3

In a separate medium bowl, whisk together the applesauce, vegetable oil, eggs, vanilla extract, and milk until smooth.

Step 4

Make a well in the center of the dry ingredients and pour the wet ingredients into the well.

Step 5

Gently stir the wet and dry ingredients together with a spatula or wooden spoon until just combined. Do not overmix; the batter will be slightly lumpy.

Step 6

If using walnuts or pecans, fold them gently into the batter.

Step 7

Divide the batter evenly among the 12 muffin cups, filling each about two-thirds full.

Step 8

Bake in the preheated oven for 18 to 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Step 9

Remove the muffins from the oven and let them cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.

Step 10

Serve warm or at room temperature. Store leftovers in an airtight container for up to 3 days, or freeze for longer storage.
