Ingredients

  • 1 pound ground beef
  • 1 medium yellow onion, finely diced
  • 2 cloves garlic cloves, minced
  • 1 cup black beans (canned), drained and rinsed
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 2 cups enchilada sauce (store-bought or homemade)
  • 2 cups shredded cheddar cheese
  • 8 pieces flour tortillas (medium-sized)
  • 1 tablespoon vegetable oil
  • 0.25 cup cilantro, chopped (optional, for garnish)
  • 0.5 cup sour cream (optional, for serving)

Directions

Step 1

Preheat the oven to 375°F (190°C).

Step 2

In a large skillet, heat the vegetable oil over medium heat.

Step 3

Add the diced onion and cook for 3–4 minutes, until softened. Add the minced garlic and cook for an additional 1 minute, stirring frequently.

Step 4

Add the ground beef to the skillet and cook until browned, breaking it up with a spoon as it cooks, about 6-8 minutes. Drain any excess fat if necessary.

Step 5

Stir in the chili powder, ground cumin, and salt. Add the black beans and cook for another 2 minutes. Set the beef mixture aside.

Step 6

Spread 1 cup of enchilada sauce evenly across the bottom of a 9x13-inch baking dish.

Step 7

Working with one tortilla at a time, spoon about 2 tablespoons of the beef mixture into the center of the tortilla. Add a small handful (about 2 tablespoons) of shredded cheddar cheese. Roll the tortilla tightly and place it seam-side down in the prepared baking dish.

Step 8

Repeat with the remaining tortillas, beef mixture, and cheese until all the enchiladas are assembled and arranged snugly in the baking dish.

Step 9

Pour the remaining 1 cup of enchilada sauce evenly over the top of the rolled enchiladas. Sprinkle the remaining shredded cheddar cheese evenly over the sauce.

Step 10

Bake in the preheated oven for 20–25 minutes, or until the cheese is melted and bubbly.

Step 11

Remove the dish from the oven and let it rest for 5 minutes before serving.

Step 12

Garnish with chopped cilantro, if desired, and serve with a dollop of sour cream on the side.
