Ingredients

  • 1 medium head Green cabbage
  • 2 large Carrots
  • 0.5 small Red onion
  • 0.5 cup Mayonnaise
  • 2 tablespoons Apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon Sugar
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Remove the outer leaves of the green cabbage and rinse under cold water. Cut it in half, then remove the core. Finely shred or chop the cabbage and place it in a large mixing bowl.

Step 2

Peel the carrots, then use a box grater or food processor to shred them. Add the shredded carrots to the bowl with the cabbage.

Step 3

Thinly slice or finely dice half a small red onion, and add it to the mixing bowl.

Step 4

In a separate small bowl, combine the mayonnaise, apple cider vinegar, Dijon mustard, sugar, salt, and black pepper. Whisk until smooth and fully incorporated.

Step 5

Pour the dressing over the cabbage, carrots, and onion mixture. Toss thoroughly to ensure all the vegetables are evenly coated with the dressing.

Step 6

Taste and adjust seasoning with additional salt or pepper if needed.

Step 7

Cover the bowl with plastic wrap or transfer the coleslaw to an airtight container. Refrigerate for at least 1 hour before serving to allow the flavors to meld.

Step 8

Serve chilled as a side dish or as a topping for sandwiches, burgers, or tacos.
