Ingredients

  • 4 large russet potatoes
  • 4 tablespoons unsalted butter
  • 4 large garlic cloves
  • 0.5 cup heavy cream
  • 0.25 cup whole milk
  • 1.5 teaspoons salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon parsley (optional, for garnish)

Directions

Step 1

Peel the russet potatoes and cut them into 2-inch chunks. Rinse the chunks under cold water to remove excess starch.

Step 2

Place the potatoes into a large pot and fill it with enough water to cover them by about 1 inch. Add 1 teaspoon of salt to the water.

Step 3

Bring the pot to a boil over medium-high heat. Once boiling, reduce the heat to medium and let the potatoes simmer for 15-20 minutes, or until they are easily pierced with a fork.

Step 4

While the potatoes cook, peel and mince the garlic cloves. Melt the butter in a small saucepan over low heat, then add the minced garlic. Cook the garlic in the butter for about 3 minutes, stirring occasionally, until it's fragrant but not browned. Remove from heat and set aside.

Step 5

Once the potatoes are cooked, drain them in a colander and return them to the pot. Let them sit for a minute to allow any excess water to evaporate.

Step 6

Pour the garlic butter mixture over the potatoes. Use a potato masher to mash the potatoes until they are chunky but slightly creamy. Leave small potato pieces for texture.

Step 7

Gently stir in the heavy cream and milk until combined. Season the mashed potatoes with the remaining 0.5 teaspoon of salt and black pepper. Taste and adjust seasoning as desired.

Step 8

Transfer the mashed potatoes to a serving bowl. If desired, garnish with freshly chopped parsley for a pop of color.

Step 9

Serve warm and enjoy!
