Ingredients

  • 4 pieces Chicken breasts (boneless, skinless)
  • 2 tablespoons Cajun seasoning
  • 2 sprigs Fresh rosemary
  • 4 sprigs Fresh thyme
  • 3 cloves Garlic cloves (minced)
  • 3 tablespoons Olive oil
  • 2 tablespoons Butter (unsalted)
  • 0.5 teaspoons Salt
  • 0.5 teaspoons Black pepper
  • 0.5 cups Chicken broth
  • 2 tablespoons Fresh parsley (chopped, for garnish)

Directions

Step 1

Place the chicken breasts on a clean surface and pat them dry with paper towels. Season both sides with salt, black pepper, and 1 tablespoon of Cajun seasoning.

Step 2

Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Once hot, add the chicken breasts and sear for 3-4 minutes on each side until golden brown. Remove the chicken from the skillet and set aside.

Step 3

In the same skillet, reduce the heat to medium and add 1 tablespoon of olive oil and the butter. Once melted, add the minced garlic and sauté for 1 minute until fragrant.

Step 4

Add the fresh rosemary and thyme sprigs to the skillet, then pour in the chicken broth and add the remaining 1 tablespoon of Cajun seasoning. Stir to combine.

Step 5

Return the chicken breasts to the skillet, spooning some of the sauce over the top. Cover the skillet with a lid and let the chicken simmer for 18-20 minutes, flipping halfway through, until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).

Step 6

Once cooked, remove the chicken from the skillet and discard the rosemary and thyme sprigs. Let the chicken rest for 5 minutes before serving.

Step 7

Serve the chicken with the pan sauce spooned over the top, and garnish with freshly chopped parsley. Pair with steamed vegetables, rice, or your favorite side dish.
