Ingredients

  • 12 oz rotini pasta
  • 3 cups broccoli florets
  • 1.5 cups sharp cheddar cheese, cubed
  • 0.5 cup red onion, finely diced
  • 1 cup mayonnaise
  • 0.5 cup sour cream
  • 2 tbsp apple cider vinegar
  • 1 tbsp granulated sugar
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the rotini pasta according to package instructions until al dente. Drain and rinse the pasta under cold water to cool it down, then set it aside.

While the pasta is cooking, steam the broccoli florets for 3-4 minutes until tender but still bright green. Immediately place the broccoli in an ice bath to stop the cooking process, then drain well.
