Ingredients

  • 1 cup Canned kidney beans (drained and rinsed)
  • 4 tablespoons Mayonnaise
  • 0.5 teaspoon Garlic powder
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 teaspoon Lemon juice
  • 6 slices Sliced sandwich bread
  • 1 tablespoon Olive oil (optional, for toasting)

Directions

Step 1

Drain and rinse the canned kidney beans thoroughly, then transfer them to a medium-sized bowl.

Step 2

Using the back of a fork or a potato masher, mash the beans until they form a chunky paste. It's okay if there are some whole or partially smashed beans remaining for texture.

Step 3

Add 2 tablespoons of mayonnaise, garlic powder, salt, black pepper, and lemon juice to the mashed beans. Mix until well combined.

Step 4

Lay 6 slices of bread on a clean surface. Spread a thin layer of mayonnaise (approximately 1/2 tablespoon per slice) on one side of each slice.

Step 5

On 2 of the bread slices, spread an even layer of the bean mixture, covering the entire surface.

Step 6

Stack another slice of bread, mayonnaise side up, on top of each bean-layered slice to create two sandwiches. On top of these, add a final slice of bread, mayonnaise side down, to complete the 'sandwich sandwich'.

If you'd like a toasted version, heat a nonstick skillet over medium heat and drizzle a small amount of olive oil. Place each sandwich sandwich in the skillet and toast for 2-3 minutes per side, or until golden brown. Skip this step for a non-toasted version.
