Ingredients

  • 12 pieces Jumbo shrimp
  • 4 tablespoons Unsalted butter
  • 1 cup Panko breadcrumbs
  • 2 cloves Garlic
  • 1 small Shallots
  • 2 tablespoons, chopped Fresh parsley
  • 2 tablespoons Lemon juice
  • 1 teaspoon Old Bay seasoning
  • 2 tablespoons, grated Parmesan cheese
  • 1 teaspoon Olive oil
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a baking dish large enough to hold the shrimp without overlapping.

Step 2

Peel and devein the jumbo shrimp, leaving the tails intact. Make a shallow cut along the back of each shrimp to butterfly them, being careful not to cut all the way through. Set aside.

Step 3

In a medium skillet, melt 2 tablespoons of butter over medium heat. Finely chop the garlic and shallots, then sauté them in the butter until fragrant and translucent, about 2-3 minutes.

Step 4

Add the panko breadcrumbs to the skillet and stir to coat them in the butter mixture. Toast the breadcrumbs lightly, about 2 minutes, then remove from heat.

Step 5

In a mixing bowl, combine the toasted breadcrumbs, chopped parsley, lemon juice, Old Bay seasoning, Parmesan cheese, olive oil, salt, and black pepper. Mix thoroughly to form a moist stuffing mixture.

Step 6

Take a prepared shrimp and gently press about 1-2 teaspoons of the stuffing mixture onto the butterflied side, ensuring the stuffing adheres well. Repeat this process for all the shrimp.

Step 7

Arrange the stuffed shrimp in the greased baking dish with the stuffing side facing up.

Step 8

Melt the remaining 2 tablespoons of butter and drizzle it over the stuffed shrimp for added moisture and flavor.

Step 9

Bake in the preheated oven for 12-15 minutes, or until the shrimp are opaque and the stuffing is golden brown.

Step 10

Serve immediately, garnished with additional parsley and lemon wedges on the side.
