Ingredients

  • 4 medium Russet potatoes
  • 1 large Yellow onion
  • 1 medium Green bell pepper
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Garlic powder
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 1 tablespoon Unsalted butter
  • 2 tablespoons Fresh parsley

Directions

Step 1

Wash and peel the potatoes, then dice them into 1/2-inch cubes.

Step 2

Fill a large pot with water, bring to a boil, and add a pinch of salt. Add the diced potatoes and parboil them for 5 minutes. Drain and set aside.

Step 3

While the potatoes are boiling, peel and dice the onion, and dice the green bell pepper into small pieces.
