Ingredients

  • 250 g All-purpose flour
  • 2 tsp Baking powder
  • 0.5 tsp Salt
  • 60 g Unsalted butter (chilled and cubed)
  • 150 g Lincolnshire Poacher cheese (grated)
  • 120 ml Whole milk
  • 30 ml Ale (preferably a pale ale)
  • 1 tsp English mustard
  • 1 large Egg (beaten, for glazing)
  • 1 pinch Freshly ground black pepper (optional, for topping)

Directions

Step 1

Preheat your oven to 200°C (390°F) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, combine the all-purpose flour, baking powder, and salt.

Step 3

Add the chilled, cubed butter to the dry ingredients. Using your fingertips, rub the butter into the flour until the mixture resembles fine breadcrumbs.

Step 4

Stir in the grated Lincolnshire Poacher cheese, reserving a small handful for topping the scones later.

Step 5

In a separate bowl or jug, whisk together the milk, ale, and English mustard until well combined.

Step 6

Make a well in the center of the dry ingredients. Gradually pour in the milk mixture, stirring gently with a knife or spatula until the dough begins to come together. Be careful not to overmix.

Step 7

Turn the dough out onto a lightly floured surface and gently knead it just until smooth. Pat the dough into a round disc about 2.5 cm (1 inch) thick.

Step 8

Using a round cutter (approximately 6 cm in diameter), cut out scones and place them on the prepared baking sheet. Gather any remaining dough, re-roll, and cut out more scones.

Step 9

Brush the tops of the scones with the beaten egg and sprinkle a little of the reserved cheese on top, along with a pinch of black pepper if desired.

Step 10

Bake in the preheated oven for 10-12 minutes, or until the scones are golden brown and well-risen.

Step 11

Allow the scones to cool slightly on a wire rack before serving warm. Enjoy with butter, extra cheese, or even a dollop of chutney!
