Ingredients

  • 12 pieces pretzel rods
  • 1 cup creamy peanut butter
  • 1 cup milk chocolate chips
  • 1 tablespoon coconut oil
  • 1 cup mini marshmallows
  • 0.5 cup chopped nuts (optional)
  • 2 tablespoons sprinkles (optional)

Directions

Step 1

Lay a sheet of parchment paper on a large baking tray for easy cleanup.

Step 2

Take each pretzel rod and spread a thin, even layer of peanut butter along one half of its length. Use a butter knife or small spatula for easier application.

Step 3

In a microwave-safe bowl, combine the milk chocolate chips and coconut oil. Microwave in 20-second intervals, stirring in between until the chocolate is completely melted and smooth.

Step 4

Dip the peanut butter-coated end of each pretzel rod into the melted chocolate, making sure it is fully covered but leaving a portion of the pretzel uncovered for easy handling.

Step 5

Immediately sprinkle the dipped chocolate with mini marshmallows, chopped nuts, or sprinkles as desired, while the chocolate is still wet.

Step 6

Place the completed Lincoln Logs onto the parchment-lined baking tray to set. Repeat the process until all pretzel rods are coated and decorated.

Step 7

Allow the Lincoln Logs to sit at room temperature for about 15-20 minutes or until the chocolate hardens completely. If needed, place them in the refrigerator for 10 minutes to speed up the process.

Step 8

Once the chocolate is fully set, serve the Lincoln Logs as a snack or dessert. Store any leftovers in an airtight container at room temperature for up to 5 days.
