Ingredients

  • 2 tablespoons olive oil
  • 1 medium, diced yellow onion
  • 1 pound ground beef
  • 4 minced garlic cloves
  • 0.5 teaspoons ground cinnamon
  • 0.5 teaspoons ground allspice
  • 0.5 teaspoons ground black pepper
  • 1 teaspoon sea salt
  • 1.5 cups long-grain white rice
  • 3 cups chicken or beef broth
  • 6 cups, chopped fresh spinach
  • 0.25 cups (optional, toasted) pine nuts
  • 1 whole (optional, for serving) lemon wedges

Directions

Step 1

Heat the olive oil in a large skillet or pot over medium heat.

Step 2

Add the diced onion and sauté until softened, about 5 minutes.

Step 3

Add the ground beef to the skillet and cook until browned, breaking it up with a wooden spoon, about 7 minutes.

Step 4

Stir in the minced garlic, cinnamon, allspice, black pepper, and salt. Cook for another 1-2 minutes until fragrant.

Step 5

Add the rice to the skillet and stir to coat it with the beef and spices, letting it toast slightly for 1-2 minutes.

Step 6

Pour in the chicken or beef broth and bring the mixture to a boil.

Step 7

Reduce the heat to low, cover the skillet, and let the rice cook for 18-20 minutes, or until the liquid is absorbed and the rice is tender.

Step 8

In the last 5 minutes of cooking, fold in the chopped spinach and allow it to wilt into the mixture.

Step 9

Once cooked, fluff the rice gently with a fork. If using, sprinkle toasted pine nuts on top for added crunch.

Step 10

Serve warm with optional lemon wedges on the side for a bright, tangy finish.
