1. Wash the lemons thoroughly with warm water to remove any residue or wax. Pat them dry with a clean towel.

2. Use a vegetable peeler or sharp paring knife to carefully remove only the yellow zest of the lemons, avoiding the white pith as it will make the limoncello bitter.

3. Place the lemon zest into a large glass jar or airtight container. Pour the vodka over the zest, ensuring the zest is fully submerged.

4. Seal the jar tightly and store it in a cool, dark place for 7 to 10 days. Shake the jar gently once per day to help infuse the flavors.
