Ingredients

  • 6 pieces Chicken thighs (bone-in, skin-on)
  • 3 tablespoons Lime juice
  • 1 tablespoon Lime zest
  • 2 tablespoons Soy sauce
  • 2 tablespoons Honey
  • 3 cloves Garlic cloves (minced)
  • 1 teaspoon Fresh ginger (grated)
  • 2 tablespoons Olive oil
  • 1 teaspoon Ground coriander
  • 1 teaspoon Paprika
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh cilantro (chopped, for garnish)
  • 4 pieces Lime wedges (for serving)

Directions

Step 1

Preheat the oven to 400°F (200°C).

Step 2

In a small bowl, combine lime juice, lime zest, soy sauce, honey, minced garlic, grated ginger, olive oil, ground coriander, paprika, salt, and black pepper. Mix well to form a marinade.

Pat the chicken thighs dry with paper towels, then place them in a large bowl or zip-top bag.
