Ingredients

  • 200 grams Gingersnap cookies
  • 85 grams Unsalted butter, melted
  • 400 grams Sweetened condensed milk
  • 120 milliliters Lime juice, freshly squeezed
  • 2 tablespoons Lime zest
  • 3 large Egg yolks
  • 200 milliliters Whipped cream
  • 1 optional Lime slices or zest for garnish

Directions

Step 1

Preheat your oven to 175°C (350°F).

Step 2

In a food processor, pulse the gingersnap cookies until they are finely ground, resembling sand-like crumbs.

Step 3

Pour the melted butter into the cookie crumbs and pulse again until the mixture is evenly combined and holds together when pressed.

Step 4

Press the gingersnap mixture firmly into the bottom and up the sides of a 9-inch pie dish to form the crust.

Step 5

Bake the crust in the preheated oven for 8 minutes. Remove from the oven and let it cool completely.

Step 6

In a medium mixing bowl, whisk together the sweetened condensed milk, lime juice, lime zest, and egg yolks until smooth and fully combined.

Step 7

Pour the lime filling into the cooled gingersnap crust, spreading it evenly with a spatula.

Step 8

Bake the pie in the oven for 12-15 minutes, or until the filling is just set (it should jiggle slightly in the center).

Step 9

Remove from the oven and let the pie cool to room temperature. Then transfer it to the refrigerator and chill for at least 2 hours or until fully set.

Step 10

Before serving, top the pie with whipped cream and garnish with lime slices or additional lime zest, if desired.

Step 11

Slice and serve chilled. Enjoy!
