Ingredients

  • 115 grams unsalted butter (melted)
  • 50 grams granulated sugar
  • 130 grams all-purpose flour
  • 1 teaspoon salt
  • 3 large eggs
  • 150 grams granulated sugar (for filling)
  • 120 milliliters lime juice (freshly squeezed)
  • 1 tablespoon lime zest
  • 2 tablespoons tequila
  • 1 tablespoon orange liqueur (such as triple sec)
  • 2 tablespoons all-purpose flour (for filling)
  • 15 grams powdered sugar (for dusting)

Directions

Step 1

Preheat your oven to 180°C (350°F) and line an 8x8-inch (20x20 cm) baking pan with parchment paper, leaving a slight overhang for easy lifting.

Step 2

In a medium mixing bowl, combine melted butter, granulated sugar (50 grams), flour (130 grams), and salt. Mix until the dough comes together.

Step 3

Press the dough evenly into the bottom of the prepared pan to form the crust. Use the back of a spoon or your fingers to smooth it out.

Step 4

Bake the crust in the preheated oven for 18-20 minutes, or until lightly golden and set. Remove from the oven and set aside.

Step 5

While the crust is baking, prepare the lime filling. In a medium bowl, whisk together the eggs, granulated sugar (150 grams), lime juice, lime zest, tequila, orange liqueur, and flour (2 tbsp). Ensure the mixture is well-combined and smooth.

Step 6

Pour the lime filling over the baked crust. Spread it evenly with a spatula if needed.

Step 7

Return the pan to the oven and bake for another 15-18 minutes, or until the edges are set and the center is slightly jiggly.

Step 8

Remove the pan from the oven and let it cool completely on a wire rack. Once cool, refrigerate for at least 2 hours to fully set the bars.

Step 9

Remove the chilled bars from the pan using the parchment paper overhang. Dust the top with powdered sugar before slicing into 9 squares.

Step 10

Serve chilled and enjoy your tangy Lime Margarita Bars!
