Ingredients

  • 120 ml Lime juice
  • 1 lime Lime zest
  • 100 g Granulated sugar
  • 480 ml Water
  • 5 leaves Fresh mint leaves (optional, for garnish)

Directions

Step 1

In a small saucepan, combine the water and granulated sugar. Heat over medium heat, stirring occasionally, until the sugar completely dissolves. This should take about 3-5 minutes.

Step 2

Remove the saucepan from heat and let the syrup cool to room temperature.

Step 3

While the syrup is cooling, zest one lime to yield about 1-2 teaspoons of zest. Then, juice enough limes to produce 120 ml of fresh lime juice.

Once the syrup has cooled, stir in the lime juice and lime zest until well combined.

Step 5

Pour the mixture into a shallow, freezer-safe dish (such as a baking dish) and place it in the freezer.

Step 6

After 30 minutes, use a fork to scrape and break up the ice crystals that are beginning to form around the edges of the dish.

Step 7

Return the dish to the freezer and repeat the scraping process every 30 minutes for 2-3 hours, or until the entire mixture has turned into fluffy, granular ice.

Step 8

Serve the lime granita immediately in chilled glasses or bowls. Optionally, garnish with fresh mint leaves for a pop of color and added aroma.
