Ingredients

  • 200 grams All-purpose flour
  • 50 grams Powdered sugar
  • 115 grams Unsalted butter (cold, cubed)
  • 1 large Egg yolks
  • 1 tablespoon Cold water
  • 120 milliliters Lime juice (freshly squeezed)
  • 2 teaspoons Lime zest
  • 150 grams Granulated sugar
  • 3 large Eggs
  • 85 grams Unsalted butter (for curd, cut into small pieces)

Directions

Step 1

Preheat your oven to 180°C (350°F).

Step 2

In a mixing bowl, combine the flour and powdered sugar.

Step 3

Add the cubed cold butter to the mixture and rub it in with your fingertips until it resembles coarse breadcrumbs.

Step 4

Mix in the egg yolk and cold water, and gently knead the dough until it comes together. Do not overwork the dough.

Flatten the dough into a disc, wrap it in plastic wrap, and refrigerate for 15-20 minutes.
