Ingredients

  • 227 grams unsalted butter, softened
  • 100 grams granulated sugar
  • 2 tablespoons lime zest
  • 1 teaspoon vanilla extract
  • 250 grams all-purpose flour
  • 50 grams shredded unsweetened coconut
  • 0.5 teaspoon salt
  • 30 grams powdered sugar (optional, for dusting)

Directions

Step 1

Preheat your oven to 160°C (325°F) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, cream together the softened butter and granulated sugar using an electric mixer until light and fluffy, about 2-3 minutes.

Step 3

Add the lime zest and vanilla extract to the butter and sugar mixture, and mix until evenly combined.

Step 4

In a separate bowl, whisk together the all-purpose flour, shredded coconut, and salt.

Step 5

Gradually add the dry ingredients into the wet ingredients, mixing on low speed until a crumbly dough forms. Use your hands to bring the dough together if needed.

Step 6

Turn the dough out onto a lightly floured surface and shape it into a disc. Wrap the dough in plastic wrap and refrigerate for 30 minutes to firm up.

Step 7

After chilling, roll the dough out to about 1/4-inch (6 mm) thickness. Use a cookie cutter to cut out your desired shapes and place them onto the prepared baking sheet, leaving a small gap between each cookie.

Step 8

Bake in the preheated oven for 18-20 minutes, or until the edges of the cookies are just turning golden. Be careful not to overbake.

Step 9

Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Step 10

If desired, dust the cooled cookies with powdered sugar before serving for an extra touch of sweetness.
