Ingredients

  • 6 pieces Limes
  • 2 tablespoons Salt
  • 1 teaspoon Turmeric powder
  • 2 teaspoons Red chili powder
  • 1 teaspoon Fenugreek seeds
  • 1 teaspoon Mustard seeds
  • 0.5 teaspoon Asafoetida
  • 2 tablespoons Sugar
  • 3 tablespoons Cooking oil (preferably sesame)
  • 0.25 cup Water

Directions

Step 1

Wash and dry the limes thoroughly. Cut each lime into small wedges and remove any visible seeds.

Step 2

Place the lime wedges in a bowl. Add 2 tablespoons of salt and 1 teaspoon of turmeric powder. Mix well to coat the limes evenly. Let the mixture sit for about 1 hour to allow the limes to release some of their juices and soften slightly.

Step 3

In a dry pan over medium heat, roast the fenugreek seeds until fragrant. Allow them to cool before grinding them to a fine powder using a spice grinder or mortar and pestle.

Step 4

Heat 3 tablespoons of cooking oil in a pan over medium heat. Add mustard seeds and let them splutter. Immediately add asafoetida, and reduce the heat slightly to avoid burning the spices.

Step 5

Stir in the prepared lime mixture with its juices. Add the red chili powder, ground fenugreek, and sugar, mixing well to combine everything.

Step 6

Pour 0.25 cup of water into the pan and bring the mixture to a gentle simmer. Cook for 10-12 minutes while stirring occasionally, until the chutney thickens and the limes soften further.

Step 7

Taste and adjust for salt or sugar, if needed, depending on your preference for tanginess or sweetness.

Step 8

Allow the lime chutney to cool completely before transferring it to a clean, airtight jar. Store in the refrigerator for up to 2 weeks.
