  • 0.5 cup unsalted butter
  • 1.25 cups all-purpose flour
  • 0.5 cup granulated sugar
  • 0.25 teaspoons salt
  • 3 large eggs
  • 0.5 cup lime juice
  • 1 tablespoon lime zest
  • 1 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 2 tablespoons powdered sugar

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease and line an 8x8-inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.

Step 2

In a medium bowl, combine 1 1/4 cups all-purpose flour, 1/2 cup granulated sugar, and 1/4 teaspoon salt. Cut in 1/2 cup unsalted butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.

Step 3

Press the mixture firmly and evenly into the prepared baking pan to form the crust. Bake for 15-18 minutes, or until the edges are lightly golden. Remove from the oven and let cool slightly while preparing the filling.

Step 4

In a separate bowl, whisk together 3 large eggs, 1 cup granulated sugar, 1/2 cup lime juice, 1 tablespoon lime zest, and 2 tablespoons all-purpose flour until smooth.

Step 5

Pour the lime filling over the warm crust and return the pan to the oven. Bake for an additional 18-20 minutes, or until the filling is set and no longer jiggles in the center.

Remove from the oven and let the lime bars cool completely in the pan on a wire rack. Once cooled, use the parchment paper overhang to lift the bars out of the pan.

Dust the top with 2 tablespoons of powdered sugar before slicing into 12 bars. Serve and enjoy!
