Ingredients

  • 2 lbs chicken wings
  • 0.5 cup apricot preserves
  • 0.25 cup soy sauce
  • 3 tbsp fresh lime juice
  • 1 tsp lime zest
  • 3 cloves garlic, minced
  • 1 tsp ginger, grated
  • 1 tbsp sesame oil
  • 2 tbsp brown sugar
  • 1 tbsp cornstarch
  • 2 tbsp water
  • 2 stalks scallions, sliced (for garnish)
  • 1 tbsp sesame seeds (optional, for garnish)

Directions

Step 1

Preheat your oven to 400°F (200°C). Line a baking sheet with aluminum foil and place an oven-safe wire rack on top. Spray the rack lightly with nonstick cooking spray to prevent sticking.

Step 2

Pat the chicken wings dry with paper towels. Arrange them in a single layer on the prepared wire rack.

Step 3

Bake the wings in the preheated oven for 35-40 minutes, turning halfway through, until they are golden brown and cooked through with an internal temperature of 165°F (74°C).

Step 4

While the wings are baking, prepare the glaze. In a medium saucepan, whisk together the apricot preserves, soy sauce, lime juice, lime zest, minced garlic, grated ginger, sesame oil, and brown sugar over medium heat.

Step 5

In a small bowl, mix the cornstarch with the water to create a slurry. Once the glaze mixture starts to simmer, stir in the slurry and cook for 1-2 minutes, until the sauce thickens to a glossy consistency. Remove from heat.

Step 6

Once the wings are fully cooked, transfer them to a large mixing bowl. Pour the prepared glaze over the wings and toss well to coat them evenly.

Step 7

Return the glazed wings to the baking sheet and bake for an additional 5 minutes in the oven to caramelize the glaze slightly.

Step 8

Remove the wings from the oven and transfer to a serving platter. Garnish with sliced scallions and sesame seeds, if desired.

Step 9

Serve immediately and enjoy your Lime Apricot Soy Wings!
