Ingredients

  • 2 cups all-purpose flour
  • 0.75 cup granulated sugar
  • 1 tablespoon baking powder
  • 0.5 teaspoon salt
  • 0.25 cup unsalted butter, melted and slightly cooled
  • 1 tablespoon lime zest
  • 0.25 cup fresh lime juice
  • 0.5 cup plain Greek yogurt
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup fresh raspberries
  • 0.5 cup powdered sugar (for optional glaze)
  • 1 tablespoon lime juice (for optional glaze)

Directions

Step 1

Preheat your oven to 350°F (175°C) and lightly grease a 9x5-inch loaf pan or line it with parchment paper.

Step 2

In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until well combined.

Step 3

In a separate medium bowl, whisk together the melted butter, lime zest, lime juice, Greek yogurt, eggs, and vanilla extract until smooth.

Step 4

Pour the wet ingredients into the dry ingredients and gently fold them together using a spatula or wooden spoon until just combined. Be careful not to overmix; some lumps in the batter are okay.

Step 5

Gently fold in the fresh raspberries, being careful not to crush them. This will help prevent streaks in the batter.

Step 6

Pour the batter evenly into the prepared loaf pan and smooth the top with a spatula.

Step 7

Bake in the preheated oven for 45-50 minutes, or until a toothpick inserted into the center of the loaf comes out clean. Check the bread at the 40-minute mark and tent it with aluminum foil if the top is browning too quickly.

Step 8

Once baked, remove the loaf from the oven and let it cool in the pan for 10-15 minutes. Then transfer it to a wire rack to cool completely.

Step 9

If you choose to make the glaze, mix the powdered sugar and lime juice in a small bowl until smooth. Drizzle the glaze over the cooled bread before slicing and serving.
