Ingredients

  • 750 g Baby potatoes
  • 2 whole Lime
  • 3 tbsp Olive oil
  • 15 g Fresh parsley
  • 30 g Green onions
  • 1 clove Garlic
  • 1 tsp Salt
  • 1 tsp Freshly ground black pepper
  • 0.5 tsp Optional: Red chili flakes

Directions

Step 1

Wash the baby potatoes thoroughly and place them in a large pot. Cover with cold water and add a pinch of salt.

Step 2

Bring the pot to a boil over medium-high heat, then reduce the heat to a simmer. Cook the potatoes for 15–20 minutes, or until they are fork-tender.

Step 3

While the potatoes are cooking, finely chop the parsley and green onions. Mince the garlic clove. Set everything aside.

Step 4

Zest one lime and juice both limes into a small bowl. Add the olive oil, minced garlic, salt, black pepper, and optional red chili flakes to the lime juice. Whisk the dressing until well combined.

Once the potatoes are cooked, drain them and let them cool slightly for about 5 minutes. Cut the potatoes in halves or quarters, depending on their size.
