Ingredients

  • 8 whole Garlic cloves
  • 1 medium, finely chopped Yellow onion
  • 1 teaspoon Ground cumin
  • 4 cups Vegetable broth
  • 3 tablespoons Lime juice
  • 1 teaspoon Lime zest
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons, chopped Fresh cilantro
  • 1 medium, diced (optional) Avocado
  • 1 cup (optional, for garnish) Tortilla chips

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the garlic cloves and sauté for 5-6 minutes, stirring frequently, until they are golden brown and fragrant. Remove and set the garlic aside to cool slightly.

In the same pot, add the chopped onion and sauté for 3-4 minutes until translucent.
