Directions

Step 1

In a medium saucepan, pour the coconut milk and water. Add the pandan leaves (if using), lightly bruised cardamom pods, and salt. Heat the mixture over medium heat until it begins to simmer. Do not boil.

Step 2

In a small bowl, mix the rice flour with a few tablespoons of water to create a smooth paste. Gradually whisk this paste into the simmering coconut milk, ensuring no lumps form.

Stir the mixture continuously over low heat until it thickens to a custard-like consistency. This should take about 7-10 minutes.
