Ingredients

  • 400 g fresh egg noodles
  • 6 stalks spring onions (green onions)
  • 30 g fresh ginger
  • 50 ml soy sauce
  • 30 ml oyster sauce
  • 15 ml sesame oil
  • 30 ml vegetable oil
  • 10 g sugar
  • 3 garlic cloves
  • 5 g chili flakes (optional)
  • 100 ml water

Directions

Step 1

Bring a large pot of water to a boil and cook the fresh egg noodles according to the package instructions. Drain and set aside.

Step 2

Thinly slice the spring onions, keeping the white and green parts separate. Peel and julienne the ginger. Finely mince the garlic cloves.

Step 3

In a small bowl, mix the soy sauce, oyster sauce, sesame oil, sugar, and water. Set aside.

Step 4

Heat the vegetable oil in a large pan or wok over medium-high heat. Add the julienned ginger and the minced garlic, cooking for 1-2 minutes until fragrant.

Step 5

Add the white parts of the spring onions to the pan, followed by the optional chili flakes if using. Cook for another minute, stirring occasionally.

Step 6

Add the cooked noodles to the pan, tossing to combine with the ginger, garlic, and spring onion mixture.

Step 7

Pour the sauce mixture over the noodles, stirring continuously to coat the noodles evenly. Cook for another 3-4 minutes until the sauce is absorbed and the noodles are heated through.

Step 8

Stir in the green parts of the spring onions and cook for an additional 1 minute, ensuring they stay bright and fresh.

Step 9

Remove from heat and serve immediately. Optionally, garnish with additional spring onions or a drizzle of sesame oil for extra flavor.
