Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 0.5 cup dry white wine
  • 1 cup heavy cream
  • 0.5 cup Parmesan cheese, grated
  • 2 tablespoons pine nuts, toasted
  • 4 cups fresh baby spinach
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon dried thyme
  • 1 piece lemon, sliced (optional for garnish)

Directions

Step 1

Season the chicken breasts with salt, pepper, and dried thyme on both sides.

Step 2

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the chicken breasts and cook for 5-6 minutes per side, or until fully cooked and golden brown. Remove chicken from skillet and set aside.

Step 3

In the same skillet, add the remaining 1 tablespoon of olive oil and minced garlic. Cook for 1 minute until fragrant.

Step 4

Deglaze the pan with white wine, scraping up any browned bits from the bottom of the skillet. Let the wine reduce by half, about 3 minutes.

Step 5

Reduce the heat to low and stir in the heavy cream. Simmer for 2-3 minutes, allowing it to thicken slightly.

Step 6

Add the grated Parmesan cheese to the sauce and stir until melted and smooth. Remove the sauce from heat and set aside.

Step 7

In a separate pot, bring chicken broth to a boil. Add orzo pasta and cook according to the package instructions, about 8-10 minutes. Drain any remaining liquid and set the orzo aside.

Step 8

In a large bowl, toss the cooked orzo with the baby spinach until the spinach begins to wilt slightly.

Step 9

To serve, divide the orzo and spinach mixture among four plates. Place one chicken breast on top of each portion. Spoon the Parmesan cream sauce generously over the chicken and pasta.

Step 10

Garnish with toasted pine nuts and optional lemon slices. Serve immediately and enjoy!
