  • 2 cups Low-fat milk
  • 1 cup Heavy cream
  • 1 tablespoon Instant espresso powder
  • 0.5 cup Sugar
  • 1 teaspoon Vanilla extract
  • 0.25 teaspoon Salt
  • 4 Egg yolks

Directions

Step 1

In a medium saucepan, combine the low-fat milk, heavy cream, and instant espresso powder. Heat over medium heat until the mixture is hot but not boiling, stirring occasionally to dissolve the espresso powder completely.

In a separate bowl, whisk together the sugar, egg yolks, and salt until smooth and pale yellow in color.

Slowly temper the egg mixture by adding a ladle of the hot milk mixture while whisking continuously to avoid curdling.

Pour the tempered egg mixture back into the saucepan with the remaining milk mixture. Cook over low heat, stirring constantly with a wooden spoon or spatula, until the custard thickens and coats the back of the spoon (about 170–175°F). Do not let it boil.
