Ingredients

  • 500 grams fresh green beans, trimmed and halved
  • 1 tablespoon olive oil
  • 1 medium yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 250 grams mushrooms, finely chopped
  • 240 milliliters low-sodium chicken or vegetable broth
  • 240 milliliters milk (preferably low-fat or unsweetened plant-based milk)
  • 2 tablespoons all-purpose flour
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 60 grams panko breadcrumbs
  • 30 grams Parmesan cheese, grated
  • 1 as needed cooking spray

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Fill a large pot with water and bring it to a boil. Add 1 teaspoon of salt and the green beans. Cook for 4-5 minutes until tender-crisp, then drain and immediately transfer to a bowl of ice water to stop the cooking process. Drain again and set aside.

In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook for 3-4 minutes, until softened. Stir in the minced garlic and cook for another 30 seconds, until fragrant.

Add the mushrooms to the skillet and cook for 5-6 minutes, stirring occasionally, until they release their moisture and begin to brown.

Sprinkle the flour over the vegetables and stir to coat evenly. Cook for 1 minute to remove the raw taste of the flour.
