Ingredients

  • 3 pounds Russet potatoes
  • 1.5 cups Low-sodium chicken broth
  • 3 pieces Garlic cloves
  • 4 ounces Reduced-fat cream cheese
  • 0.5 cups Low-fat milk
  • 1 teaspoons Salt
  • 0.5 teaspoons Black pepper
  • 2 tablespoons Butter
  • 2 tablespoons Chopped fresh chives (optional)

Directions

Step 1

Peel the potatoes and chop them into 2-inch chunks. Rinse under cold water to remove excess starch.

Step 2

Place the chopped potatoes, chicken broth, and garlic cloves into the crock pot.

Step 3

Cover and cook on high for 4 hours or on low for 6-7 hours, until the potatoes are fork-tender.

Step 4

Once the potatoes are cooked, drain any excess chicken broth, leaving about 1/4 cup in the crock pot.

Step 5

Add the reduced-fat cream cheese, low-fat milk, butter, salt, and black pepper to the crock pot.

Step 6

Using a hand masher or an electric hand mixer, mash the potatoes until smooth and creamy. Add more milk, one tablespoon at a time, if needed to achieve desired consistency.

Step 7

Taste and adjust seasoning with additional salt and pepper, if necessary.

Step 8

Transfer to a serving bowl and garnish with chopped fresh chives, if desired.

Step 9

Serve warm and enjoy!
