Ingredients

  • 4 medium zucchini
  • 2 tablespoons olive oil
  • 1 small, diced yellow onion
  • 2 cloves, minced garlic
  • 1 small, diced red bell pepper
  • 1 cup, halved cherry tomatoes
  • 1 cup cooked quinoa
  • 2 tablespoons, chopped fresh parsley
  • 1 teaspoon dried oregano
  • 0.25 cup, grated Parmesan cheese
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Slice the zucchinis in half lengthwise and use a spoon to carefully scoop out the inner flesh, leaving a 1/4-inch border to form a shell. Reserve the scooped flesh and finely chop it.

Step 3

In a large skillet, heat olive oil over medium heat. Add the diced onion and cook for 3-4 minutes until softened.

Stir in the minced garlic and cook for another 30 seconds until fragrant.
