Ingredients

  • 300 grams fresh strawberries
  • 50 grams granulated sugar
  • 250 ml cold heavy cream
  • 1 teaspoon gelatin powder
  • 2 tablespoons water
  • 1 teaspoon vanilla extract
  • 50 grams fresh strawberries (for garnish)

Directions

Step 1

Wash and hull the fresh strawberries. Using a blender or food processor, puree the strawberries until smooth.

Step 2

In a small saucepan, combine the strawberry puree and granulated sugar. Heat over medium-low heat for 3–5 minutes, stirring occasionally, until the sugar is fully dissolved. Remove from heat and let it cool to room temperature.

Step 3

In a small bowl, combine the gelatin powder and water. Let it sit for 5 minutes to bloom.

Step 4

Microwave the bloomed gelatin for 10 seconds or until it melts into a liquid. Stir the melted gelatin into the cooled strawberry mixture until fully incorporated.

Step 5

In a separate mixing bowl, whip the cold heavy cream and vanilla extract using an electric mixer on medium speed until soft peaks form.

Step 6

Gently fold the whipped cream into the strawberry-gelatin mixture in three batches, being careful not to deflate the mixture.

Step 7

Spoon the mousse into serving glasses or bowls. Cover and refrigerate for at least 2 hours or until set.

Step 8

Just before serving, garnish with fresh strawberries and enjoy!
