Ingredients

  • 6 large eggs
  • 3 cups fresh spinach
  • 0.25 cup milk
  • 0.25 cup Parmesan cheese (grated)
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 tablespoon olive oil
  • 0.5 cup onion (finely chopped)
  • 2 cloves garlic (minced)
  • 1 cup cherry tomatoes (diced)
  • 1 small jalapeno (finely chopped)
  • 2 tablespoons cilantro (chopped)
  • 1 tablespoon lime juice
  • 0.25 teaspoon salt (for salsa)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a medium mixing bowl, whisk together the eggs, milk, Parmesan cheese, 1/2 teaspoon salt, and 1/4 teaspoon black pepper until well combined. Set aside.

Step 3

Heat a medium oven-safe skillet over medium heat. Add the olive oil.

Step 4

Once the oil is hot, add the finely chopped onion and cook for 2-3 minutes until softened. Add the minced garlic and sauté for another 30 seconds until fragrant.

Step 5

Add the fresh spinach to the skillet and cook, stirring, until wilted, about 2 minutes.

Step 6

Reduce the heat to low and spread the spinach mixture evenly across the skillet.

Step 7

Pour the egg mixture over the spinach, ensuring even coverage. Let it cook on the stovetop for about 2-3 minutes until the edges just begin to set.

Step 8

Transfer the skillet to the preheated oven and bake for 12-15 minutes, or until the frittata is fully set in the center and slightly golden on top.

Step 9

While the frittata is baking, prepare the salsa. In a small mixing bowl, combine the diced cherry tomatoes, chopped jalapeno, cilantro, lime juice, and 1/4 teaspoon salt. Mix well and set it aside.

Step 10

Remove the frittata from the oven and let it cool for 5 minutes before slicing into wedges.

Step 11

Serve the frittata warm, topped with a spoonful of fresh salsa. Enjoy!
