Ingredients

  • 12 oz smoked sausage
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 medium zucchini
  • 1 small red onion
  • 1 lb baby potatoes
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp dried oregano
  • 0.5 tsp black pepper
  • 0.5 tsp salt
  • 2 tbsp fresh parsley (optional for garnish)

Directions

Step 1

Wash and pat dry the baby potatoes. Cut them into quarters for quicker cooking. Set aside.

Step 2

Slice the smoked sausage into 1/4-inch rounds. Dice the red bell pepper and yellow bell pepper into bite-sized pieces. Slice the zucchini into half-moons and thinly slice the red onion.

Step 3

Bring a medium-sized pot of salted water to a boil. Add the quartered baby potatoes and boil for 8–10 minutes, or until they are fork-tender. Drain the potatoes and set aside.

Step 4

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the smoked sausage rounds and cook for 3–4 minutes on each side until browned. Remove the sausage from the skillet and set aside.

Step 5

In the same skillet, add the remaining 1 tablespoon of olive oil. Add the red onion, red bell pepper, and yellow bell pepper. Cook for 3 minutes, stirring occasionally until they begin to soften.

Add the zucchini to the skillet and cook for an additional 3 minutes, stirring occasionally.

Return the cooked baby potatoes and smoked sausage to the skillet. Sprinkle with garlic powder, paprika, dried oregano, black pepper, and salt. Gently toss to combine all the ingredients and evenly coat them with the seasoning.

Cook for another 5 minutes, stirring occasionally, until everything is heated through and golden brown.

Remove from heat and garnish with freshly chopped parsley, if desired.
