Ingredients

  • 2 cups Fresh pineapple, peeled and chopped
  • 3 tablespoons Granulated sugar
  • 1 packet Unflavored gelatin powder
  • 3 tablespoons Cold water
  • 1 cup Heavy cream, chilled
  • 1 teaspoon Vanilla extract
  • 2 tablespoons Powdered sugar
  • 6 leaves Fresh mint leaves (optional, for garnish)

Directions

Step 1

Blend the chopped pineapple in a blender or food processor until smooth, then strain the puree through a fine mesh sieve to remove fibers. You should have about 1 1/2 cups of smooth pineapple puree.

Step 2

Transfer the pineapple puree into a small saucepan, add the granulated sugar, and heat over medium heat for 3-4 minutes, stirring constantly, until the sugar dissolves. Remove from heat and allow the mixture to cool slightly.

Step 3

In a small bowl, add the cold water and sprinkle the unflavored gelatin evenly on top. Let it sit for 5 minutes to bloom.

Once the gelatin has bloomed, microwave it for 10-15 seconds or heat gently over a double boiler until it is fully dissolved. Stir the dissolved gelatin into the warm pineapple mixture and let it cool to room temperature.
