Ingredients

  • 2 cups (packed) Fresh basil leaves
  • 1 cup (packed) Baby spinach
  • 2 units Garlic cloves
  • 2 tablespoons Pine nuts
  • 3 tablespoons Grated Parmesan cheese
  • 2 tablespoons Extra-virgin olive oil
  • 2 tablespoons Water
  • 1 tablespoon Fresh lemon juice
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Rinse and pat dry the fresh basil leaves and baby spinach. Set aside.

Step 2

Peel the garlic cloves and roughly chop them to make blending easier.

Step 3

In a dry skillet over medium heat, lightly toast the pine nuts for 2-3 minutes, stirring constantly, until they are golden and fragrant. Remove from heat and let cool for a minute.

In a food processor or high-speed blender, combine the basil leaves, baby spinach, garlic, toasted pine nuts, and Parmesan cheese.
