Ingredients

  • 12 oz penne pasta
  • 2 pieces boneless, skinless chicken breasts
  • 1 cup sun-dried tomatoes (packed in olive oil, drained)
  • 4 pieces garlic cloves
  • 3 tbsp extra virgin olive oil
  • 0.5 cup chicken broth
  • 2 cups fresh spinach leaves
  • 0.25 cup Parmesan cheese (grated)
  • 0.25 tsp red pepper flakes (optional)
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the penne pasta according to package instructions until al dente. Drain and set aside.

While the pasta is cooking, season the chicken breasts with salt and black pepper on both sides.

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the chicken breasts and cook for 5-6 minutes on each side, or until the internal temperature reaches 165°F (75°C). Remove the chicken from the skillet, let it rest for 5 minutes, and then slice into thin strips.
