Ingredients

  • 240 ml Fresh orange juice
  • 2 teaspoons Orange zest
  • 60 grams Granulated sugar
  • 1 packet Unflavored gelatin
  • 60 ml Cold water
  • 240 ml Heavy whipping cream
  • 1 teaspoon Vanilla extract
  • 2 large Egg whites
  • 20 grams Powdered sugar

Directions

Step 1

In a small bowl, sprinkle the gelatin over the cold water and let it bloom for 5 minutes.

Step 2

In a small saucepan, combine fresh orange juice, orange zest, and granulated sugar. Heat over medium heat, stirring, until the sugar dissolves completely. Do not boil.

Step 3

Remove the saucepan from the heat and stir in the bloomed gelatin until fully dissolved.

Allow the orange mixture to cool to room temperature.

In a mixing bowl, whip the heavy cream with the vanilla extract until soft peaks form. Set aside in the refrigerator to keep chilled.
