Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 tablespoons lime juice
  • 1 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 1 cup corn kernels (fresh, frozen, or canned; if canned, drain and rinse)
  • 1 piece red bell pepper, diced
  • 1 piece yellow onion, diced
  • 2 tablespoons fresh cilantro, chopped
  • 1 piece avocado, sliced (optional, for garnish)
  • 4 pieces lime wedges (for serving)

Directions

Step 1

Place the chicken breasts on a cutting board. Using a meat mallet or rolling pin, lightly pound them to an even thickness for uniform cooking.

Step 2

In a small bowl, whisk together olive oil, lime juice, garlic powder, ground cumin, smoked paprika, chili powder, salt, and black pepper to create the marinade.

Step 3

Rub the marinade evenly over the chicken breasts. Cover and let marinate for 10-15 minutes at room temperature while you prepare the vegetables.

Step 4

Heat a large, non-stick skillet over medium-high heat. Once hot, add the chicken breasts to the skillet and cook for 5-6 minutes on each side, or until the internal temperature reaches 165°F (74°C). Remove the chicken from the skillet and let it rest on a plate.

Step 5

In the same skillet, add a little more olive oil if needed, then toss in the diced red bell pepper, yellow onion, and corn kernels. Sauté for 4-5 minutes until the vegetables are tender and slightly charred.

Step 6

Slice the rested chicken breasts into strips and return them to the skillet with the sautéed vegetables. Toss everything together gently to combine and warm through.

Step 7

Serve the Light Mexican Chicken on plates or bowls. Garnish with fresh cilantro and optional avocado slices. Add lime wedges on the side for an extra burst of citrus flavor.
